I think you are right. They use more ice, less cachaça, save money on the booze and get to serve more drinks. But I would guess the price for a bottle of cachaça is more “customerfriendly” in Brazil as well. Thanks for the info regarding raspadinha, but I guess we leave the cachaça out for the kids?
The Brazilian husband was sitting beside me when I browsed your blog and wanted to see the link above. He was so positively surprised that this recipe involves ice cubes instead of crushed ice
I guess bars often use crushed ice, because that way they have to pour less cachaça into the mix and their guests stay sober for a longer time. But in Brazil it is always done with huge ice cubes. Otherwise they call it raspadinha (lemon sorbet for children). Cheers.
